Who We Are
We (Nathan and Emily Paulsen) own and operate Brun Ko Farm, located 3 miles East of Elk Horn, IA. We raise pastured beef and pork in addition to eggs, honey, and a wide variety of vegetables. Brun Ko Farm has grown from our shared passion for all thing’s food. From the growing to the preparing and of course, the eating, we enjoy every part of the process. Emily especially enjoys putting together our Date Night CSA boxes which highlight the fact that entire meals can be made from locally produced meats and vegetables. The popular boxes include meat, veggies, herbs, and recipes to prepare a meal. The boxes also include Emily’s homemade desserts. We have 2 kids, Olivia (3yo) and Eli (1.5yo). Luckily, the kids love being outdoors as much as we do and join in on chores in all seasons with 'snow mountain' being the highlight of their winter months. In rare moments of free time, Nathan enjoys camping, bicycling and all manner of tinkering while Emily spends her stolen moments quilting and sitting by the fire with friends and family. In fact, Emily would love to revive old fashioned quilting bees during the winter months. (COVID please go away so this can happen) We also enjoy sharing the farm experience with others through blogging, tours, and group presentations. We have welcomed several school groups to the farm over the past 6 years and we look forward to doing so many more times in the years to come. One of Emily’s favorite memories was of a group that participated in a pepper tasting experience. All the kids tried the colorful variety of sliced peppers, although some of them hesitantly. After trying the peppers, several kids declared with surprise that that they DO like bell peppers after all!
What is the significance to Brun Ko?
With Danish heritage in both of our families and living in a community that takes great pride in their Danish descent, we decided to incorporate that into our farm name. With that said, our farm began with a small herd of Jersey cattle that will forever be in our hearts. So, the name Brun Ko, meaning 'brown cow' in Danish holds a lot of significance for us.
